Pear and Ginger Sponge

225g butter or margarine

225g caster sugar

4 eggs beaten

225g raising flour

1tsp baking power

Pinch of salt 3

15ml spoons

3 tbs warm water

4 ripe pears

50g

fresh ginger

for the pears and ginger:

quarter the pears and discard the seeds, cut into chunks

grate the ginger and mix with the pears

butter a deep baking (or casserole) dish

place pear and ginger inside the dish

 

for the sponge:

Cream the butter/margarine with the sugar until light and fluffy

slowly fold in the eggs

Sift the flour and salt together and fold gently into the egg mixture

add warm water (if necessary) to make the batter drop off a spoon

pour mixture over the pears and ginger

bake in the oven at 200 C for about 40 minutes
