Ingredients

  • 500 ml milk (dairy or plant-based)

  • 1 tsp ground turmeric

  • ½ tsp ground cinnamon

  • ¼ tsp ground ginger (optional)

  • Pinch of black pepper (helps absorb turmeric)

  • 1–2 tsp honey or maple syrup (to taste)

  • Optional: pinch of nutmeg or cardamom

Method

  1. Heat milk: Pour milk into a small saucepan over medium heat.

  2. Add spices: Whisk in turmeric, cinnamon, ginger (if using) and black pepper.

  3. Simmer: Warm gently 3–4 minutes, stirring often, until fragrant.

  4. Sweeten: Remove from heat and stir in honey or maple syrup.

  5. Serve: Pour into mugs and enjoy warm.

This turmeric chicken and rice dish is a wonderfully aromatic, wholesome meal that brings warm spice and vibrant colour to a hearty one-pot dinner.

Ingredients

  • 1 tbsp olive oil

  • 4 chicken thighs (bone-in or boneless)

  • Salt and black pepper, to taste

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1 tbsp fresh turmeric (or 1 tsp ground)

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1½ cups long-grain rice

  • 3 cups chicken stock

  • Optional: peas or chopped vegetables

  • Optional: fresh parsley or cilantro

Method

  1. Season chicken: Sprinkle chicken thighs with salt and pepper.

  2. Brown chicken: Heat olive oil in a large pot or skillet over medium-high heat. Add chicken and cook 5–7 minutes until golden. Remove and set aside.

  3. Sauté aromatics: Add onion and garlic to the same pot and cook 3–4 minutes until softened.

  4. Add spices & rice: Stir in turmeric, cumin, paprika and rice, coating grains with spices.

  5. Add stock & simmer: Pour in chicken stock and bring to a boil. Return chicken to the pot, reduce heat, cover and simmer 25–30 minutes until rice is tender and liquid absorbed.

  6. Finish: Stir in peas or vegetables if using and cook a few minutes more. Garnish with fresh parsley or cilantro.
