Ingredients

  • 600–800 g beets, tops trimmed

  • 2–3 tbsp olive oil

  • Salt and black pepper, to taste

  • Optional: fresh herbs (thyme, rosemary)

  • Optional: balsamic vinegar or lemon juice

Method

  1. Preheat: Heat oven to 200°C and line a baking tray with parchment paper.

  2. Prepare beets: Scrub beets well. Leave small beets whole, halve larger ones.

  3. Season: Toss beets with olive oil, salt and pepper (and herbs if using).

  4. Roast: Spread in a single layer and roast 45–60 minutes, turning halfway, until tender when pierced with a fork.

  5. Finish: Optional: drizzle with balsamic vinegar or lemon juice before serving.

  6. Serve: Serve warm as a simple side or salad base.

Ingredients

For the roasted beets

  • 500–600 g beets, scrubbed and trimmed

  • Olive oil, salt and pepper

For the pickled mushrooms

  • 150 g mushrooms, cleaned and sliced

  • 60 ml white wine vinegar

  • 1 tsp sugar

  • Salt and pepper

For the caramelized shallots

  • 3–4 shallots, thinly sliced

  • 1 tbsp olive oil or butter

  • Pinch of salt

  • Optional: splash of balsamic vinegar

For assembly

  • Mixed salad greens

  • Fresh herbs (parsley, dill or chives)

  • Optional: goat cheese or feta

Method

  1. Roast beets: Preheat oven to 200°C. Toss beets with oil, salt and pepper and roast 45–60 minutes until tender. Let cool, peel and slice.

  2. Pickle mushrooms: Meanwhile, combine mushrooms, vinegar, sugar, salt and pepper in a small bowl. Let sit to lightly pickle.

  3. Caramelize shallots: Heat oil or butter in a pan over medium heat. Add shallots with a pinch of salt and cook 10–12 minutes, stirring often, until golden and sweet. Add a splash of balsamic vinegar if you like.

  4. Assemble salad: On a platter, arrange salad greens, roasted beet slices, pickled mushrooms and caramelized shallots.

  5. Finish: Sprinkle with fresh herbs and add goat cheese or feta if using.

  6. Serve: Serve immediately as an elegant starter or side.
