Ingredients

  • 2 large onions, peeled and cut into rings

  • 180 g all-purpose flour, plus extra for dusting

  • 1 tsp baking powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • 180 ml beer (lager or ale)

  • Vegetable oil for frying

  • Optional: paprika or cayenne for extra heat

Method

  1. Prep onions: Separate onion into rings and pat dry. Dust lightly with flour.

  2. Make batter: In a bowl whisk flour, baking powder, salt and pepper. Gradually whisk in beer until smooth.

  3. Heat oil: Warm oil in a deep pan (about 180°C).

  4. Dip & fry: Dip each onion ring into the batter, then carefully place in hot oil. Fry 2–3 minutes per side until golden and crisp.

  5. Drain: Remove with a slotted spoon and drain on paper towels.

  6. Serve: Season with salt and serve hot with your favourite dip.
