These golden, crisp beer-battered onion rings are light, crunchy and perfect as a snack or side. The beer in the batter gives extra lift and flavour without heaviness.
Ingredients

2 large onions, peeled and cut into rings

180 g all-purpose flour, plus extra for dusting

1 tsp baking powder

½ tsp salt

¼ tsp black pepper

180 ml beer (lager or ale)

Vegetable oil for frying

Optional: paprika or cayenne for extra heat
Method

Prep onions: Separate onion into rings and pat dry. Dust lightly with flour.

Make batter: In a bowl whisk flour, baking powder, salt and pepper. Gradually whisk in beer until smooth.

Heat oil: Warm oil in a deep pan (about 180°C).

Dip & fry: Dip each onion ring into the batter, then carefully place in hot oil. Fry 2–3 minutes per side until golden and crisp.

Drain: Remove with a slotted spoon and drain on paper towels.

Serve: Season with salt and serve hot with your favourite dip.
