A crisp and colourful salad that pairs juicy pomegranate seeds with fresh herbs and crunchy pistachios — ideal as a vibrant side or light lunch.
Ingredients

120 g pomegranate seeds (or seeds from 1 large pomegranate)

100 g mixed salad leaves (or herbs such as parsley, dill and mint)

1 small cucumber, chopped

1–2 spring onions, sliced

3 tbsp red wine vinegar

1 tbsp honey
-
Juice of 1 orange

Salt & black pepper, to taste

100 g pistachios, roughly chopped
Method

Make the dressing: Whisk together orange juice, red wine vinegar, honey and a pinch of salt and pepper.

Combine salad: In a large bowl, add salad leaves (or herbs), cucumber, spring onions and pomegranate seeds.

Add pistachios: Sprinkle in the chopped pistachios.

Dress: Pour the dressing over the salad and gently toss until everything is coated.

Serve: Serve immediately as a refreshing side dish.
