Ingredients

  • 120 g pomegranate seeds (or seeds from 1 large pomegranate)

  • 100 g mixed salad leaves (or herbs such as parsley, dill and mint)

  • 1 small cucumber, chopped

  • 1–2 spring onions, sliced

  • 3 tbsp red wine vinegar

  • 1 tbsp honey

  • Juice of 1 orange

  • Salt & black pepper, to taste

  • 100 g pistachios, roughly chopped

Method

  1. Make the dressing: Whisk together orange juice, red wine vinegar, honey and a pinch of salt and pepper.

  2. Combine salad: In a large bowl, add salad leaves (or herbs), cucumber, spring onions and pomegranate seeds.

  3. Add pistachios: Sprinkle in the chopped pistachios.

  4. Dress: Pour the dressing over the salad and gently toss until everything is coated.

  5. Serve: Serve immediately as a refreshing side dish.

  • 2 oz dark chocolate, grated (optional topping)

Method
