These blueberry crumb bars have a buttery shortbread base, a sweet blueberry filling and a golden crumb topping — warm, fruity and perfect for dessert or brunch.
Ingredients

250 g all-purpose flour

150 g sugar

1 tsp baking powder

Pinch of salt

180 g unsalted butter, cold and cubed

1 large egg

2 tsp vanilla extract
-
300–350 g fresh or frozen blueberries

2 tbsp lemon juice
-
2 tbsp cornstarch

Optional: lemon zest
Method

Preheat: Heat oven to 180 °C and line a baking pan with parchment paper.

Make dough: In a bowl, mix flour, sugar, baking powder and salt. Cut in cold butter until crumbly, then stir in egg and vanilla to form a dough.

Prepare filling: In another bowl, toss blueberries with lemon juice, cornstarch and lemon zest if using.

Assemble: Press half the dough into the base of the pan. Spread blueberry mixture evenly over the top, then crumble remaining dough over the berries.

Bake: Bake 40–45 minutes until the top is golden and the filling is bubbling.

Cool & serve: Let cool before slicing into bars.
