These blueberry crumb bars have a buttery shortbread base, a sweet blueberry filling and a golden crumb topping — warm, fruity and perfect for dessert or brunch.

Ingredients

  • 250 g all-purpose flour

  • 150 g sugar

  • 1 tsp baking powder

  • Pinch of salt

  • 180 g unsalted butter, cold and cubed

  • 1 large egg

  • 2 tsp vanilla extract

  • 300–350 g fresh or frozen blueberries

  • 2 tbsp lemon juice

  • 2 tbsp cornstarch

  • Optional: lemon zest

Method

  1. Preheat: Heat oven to 180 °C and line a baking pan with parchment paper.

  2. Make dough: In a bowl, mix flour, sugar, baking powder and salt. Cut in cold butter until crumbly, then stir in egg and vanilla to form a dough.

  3. Prepare filling: In another bowl, toss blueberries with lemon juice, cornstarch and lemon zest if using.

  4. Assemble: Press half the dough into the base of the pan. Spread blueberry mixture evenly over the top, then crumble remaining dough over the berries.

  5. Bake: Bake 40–45 minutes until the top is golden and the filling is bubbling.

  6. Cool & serve: Let cool before slicing into bars.

  • ¼ tsp salt

  • ½ tsp cinnamon (optional)

  • 200–250 g fresh blueberries

  • Optional: coarse sugar or lemon zest for topping

Method

  1. Preheat: Heat oven to 180°C and line a baking sheet with baking paper.

  2. Mix wet ingredients: In a bowl whisk oil, sugar, eggs and vanilla until combined.

  3. Add dry ingredients: Stir in flour, baking powder, salt and cinnamon (if using) until a soft dough forms.

  4. Add fruit: Gently fold in blueberries so they’re evenly distributed.

  5. Scoop & bake: Drop tablespoonfuls of dough onto the prepared sheet, spacing them apart. Bake 12–15 minutes until set and lightly golden at the edges.

  6. Cool & serve: Let cool slightly on the sheet before transferring to a rack.
