These oven-baked sweet potato fries are crisp on the outside, tender on the inside and seasoned for maximum flavour — a delicious side or snack with your favourite dip.

Ingredients

  • 4 medium sweet potatoes, washed and cut into sticks

  • 2 tbsp olive oil

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of cayenne for heat

  • Optional: herbs (rosemary or thyme)

Method

  1. Preheat: Heat oven to 220°C and line a baking sheet with parchment paper.

  2. Prep fries: Place sweet potato sticks in a large bowl.

  3. Season: Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, pepper (and cayenne/herbs if using). Toss to coat evenly.

  4. Arrange: Spread fries in a single layer on the baking sheet without overcrowding.

  5. Bake: Bake 25–30 minutes, flipping halfway, until edges are crisp and golden.

  6. Serve: Serve hot with your favourite dip.

These loaded sweet potatoes are baked until fluffy and then filled with a savoury mix — hearty, nutritious and perfect for lunch or dinner.

Ingredients

  • 4 medium sweet potatoes

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 1 cup black beans, drained and rinsed

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • Salt and black pepper, to taste

  • 100 g shredded cheese (optional)

  • Optional toppings: sour cream, avocado, fresh cilantro

Method

  1. Preheat: Heat oven to 200°C.

  2. Bake potatoes: Pierce sweet potatoes with a fork and place on a baking sheet. Bake 45–50 minutes until tender.

  3. Cook filling: While potatoes bake, heat olive oil in a skillet over medium heat. Add onion and bell pepper and cook 5–7 minutes until softened.

  4. Add beans & spices: Stir in black beans, cumin, chili powder, salt and pepper and cook 3–5 minutes until heated through.

  5. Assemble: Once sweet potatoes are done, cut lengthwise and fluff the insides with a fork. Stuff with the bean mixture and sprinkle cheese on top if using.

  6. Serve: Serve warm with sour cream, avocado and cilantro.
