Easy Baked Zucchini

Oven-baked zucchini gets lightly golden and tender, accented with herbs and seasoning — an effortless side that’s great with grilled proteins or grain bowls.

Ingredients

  • 4 medium zucchini, sliced into rounds or sticks

  • 2–3 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp dried oregano or Italian seasoning

  • Salt and black pepper, to taste

  • Optional: grated Parmesan

Method

  1. Preheat: Heat oven to 220°C and line a baking sheet with parchment paper.

  2. Prep zucchini: Place zucchini pieces in a large bowl.

  3. Season: Drizzle with olive oil, then sprinkle with garlic powder, oregano, salt and pepper. Toss to coat evenly.

  4. Arrange: Spread zucchini in a single layer on the prepared sheet.

  5. Bake: Bake 15–20 minutes, turning halfway, until tender and lightly golden.

  6. Serve: Optional: sprinkle with grated Parmesan before serving.

Method

  1. Heat butter: Warm butter (or oil) in a large skillet over medium heat.

  2. Sauté zucchini: Add zucchini slices and cook 5–7 minutes, stirring often, until they begin to soften.

  3. Add garlic: Stir in minced garlic and continue cooking 2–3 minutes until zucchini is tender and garlic is fragrant.

  4. Season: Season with salt and pepper (add lemon zest or herbs if desired).
