Oven-baked zucchini gets lightly golden and tender, accented with herbs and seasoning — an effortless side that’s great with grilled proteins or grain bowls.
Ingredients

4 medium zucchini, sliced into rounds or sticks

2–3 tbsp olive oil

1 tsp garlic powder

½ tsp dried oregano or Italian seasoning

Salt and black pepper, to taste

Optional: grated Parmesan
Method

Preheat: Heat oven to 220°C and line a baking sheet with parchment paper.

Prep zucchini: Place zucchini pieces in a large bowl.

Season: Drizzle with olive oil, then sprinkle with garlic powder, oregano, salt and pepper. Toss to coat evenly.

Arrange: Spread zucchini in a single layer on the prepared sheet.

Bake: Bake 15–20 minutes, turning halfway, until tender and lightly golden.
