Old-Fashioned Apple Pie

A classic apple pie with a flaky, buttery crust and spiced apple filling — perfect for dessert or a cosy celebration.

Ingredients

For the pastry

  • 350 g plain flour

  • 250 g cold unsalted butter, cubed

  • 1 tsp sugar

  • Pinch of salt

  • 75–100 ml cold water

For the filling

  • 6–8 cooking apples (Granny Smith or similar), peeled, cored and sliced

  • 150 g caster sugar

  • 1–2 tsp ground cinnamon

  • 1 tbsp lemon juice

  • 1 tbsp plain flour (to thicken)

  • 1 egg beaten (for glaze)

  • Optional: 1 tsp nutmeg

Method

Make pastry: In a bowl, rub cold butter into flour, sugar and salt until the mix resembles breadcrumbs. Add cold water gradually and bring together to form dough. Divide in two, wrap and chill 30 minutes.
Preheat: Heat oven to 190°C.
Make filling: In a large bowl, combine sliced apples, caster sugar, cinnamon, lemon juice and flour until evenly coated.
Assemble: Roll out one portion of pastry to line a pie dish. Add apple filling. Roll out second portion for the top crust. Trim edges and crimp.
Bake: Brush pastry with beaten egg and bake 50–60 minutes until golden and filling is bubbling.
Cool & serve: Let cool slightly before serving with cream or ice cream.

Baked Apples with Oatmeal Filling

Prep time: 15 minutes

Baked apples with a warm oatmeal filling are a comforting dessert or breakfast treat — lightly spiced and sweet without needing lots of sugar.

Ingredients

  • 4 large apples, cored

  • 80 g rolled oats

  • 40 g brown sugar

  • 1 tsp cinnamon

  • 30 g chopped nuts (optional)

  • 30 g raisins or dried cranberries (optional)

  • 30 g butter or coconut oil, melted

  • Optional: yoghurt or cream, to serve

Method

Preheat: Heat oven to 180°C.
Make filling: In a bowl, combine oats, brown sugar, cinnamon, nuts and dried fruit if using. Stir in melted butter until crumbly.
Prep apples: Place cored apples in a baking dish. Spoon the oatmeal mixture into each apple.
Bake: Pour a little water (about 60 ml) into the base of the dish and bake 30–35 minutes until apples are tender.
Serve: Serve warm with yoghurt or cream.
