This apricot chicken is a juicy, flavourful dish where sweet apricots and savoury chicken come together in a simple pan sauce — great with rice, couscous or a crisp salad.

Ingredients

  • 4 boneless skinless chicken breasts

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 1 small onion, thinly sliced

  • 2 garlic cloves, minced

  • 1 cup chicken broth

  • ½ cup apricot preserves (or jam)

  • 2 tbsp Dijon mustard

  • 1 tbsp soy sauce

  • 1 tsp fresh ginger, grated (optional)

  • 1 cup dried apricots, halved

  • Fresh parsley or thyme (for garnish)

Method

  1. Season chicken: Pat the chicken dry and season both sides with salt and pepper.

  2. Brown chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5–7 minutes per side until golden. Remove and set aside.

  3. Sauté aromatics: Add sliced onion and garlic to the same pan and cook 2–3 minutes until softened.

  4. Make sauce: Whisk together chicken broth, apricot preserves, Dijon, soy sauce and ginger. Pour into the pan and bring to a simmer.

  5. Add apricots & chicken: Stir in dried apricots, return chicken to the pan, reduce heat and simmer 15–20 minutes until sauce is glossy and chicken is cooked through.

  6. Serve: Garnish with parsley or thyme and serve over rice or couscous.

Apricot Almond Cake

A fragrant, tender cake where juicy apricots and crunchy almonds shine — perfect with tea, dessert or even breakfast.

Ingredients

  • 150 g unsalted butter, softened

  • 150 g sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 200 g plain flour

  • 100 g almond meal (ground almonds)

  • 2 tsp baking powder

  • Pinch of salt

  • 8–10 fresh apricots, halved and pitted

  • Flaked almonds, for sprinkling

  • Optional: icing sugar, for dusting

Method

  1. Preheat: Heat the oven to 180°C. Grease and line a round cake tin (about 23 cm).

  2. Cream butter & sugar: In a bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.

  3. Add dry ingredients: Stir together flour, almond meal, baking powder and salt, then fold into the wet ingredients until just combined.

  4. Assemble: Spoon batter into the prepared tin. Arrange apricot halves cut-side up on top and sprinkle with flaked almonds.

  5. Bake: Bake 40–45 minutes, until the top is golden and a skewer comes out clean.

  6. Cool & serve: Let cool before dusting with icing sugar and slicing.
