This apricot chicken is a juicy, flavourful dish where sweet apricots and savoury chicken come together in a simple pan sauce — great with rice, couscous or a crisp salad.
Ingredients

4 boneless skinless chicken breasts

Salt and pepper, to taste

1 tbsp olive oil

1 small onion, thinly sliced

2 garlic cloves, minced

1 cup chicken broth
-
½ cup apricot preserves (or jam)

2 tbsp Dijon mustard

1 tbsp soy sauce
-
1 tsp fresh ginger, grated (optional)

1 cup dried apricots, halved

Fresh parsley or thyme (for garnish)
Method

Season chicken: Pat the chicken dry and season both sides with salt and pepper.

Brown chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5–7 minutes per side until golden. Remove and set aside.

Sauté aromatics: Add sliced onion and garlic to the same pan and cook 2–3 minutes until softened.

Make sauce: Whisk together chicken broth, apricot preserves, Dijon, soy sauce and ginger. Pour into the pan and bring to a simmer.

Add apricots & chicken: Stir in dried apricots, return chicken to the pan, reduce heat and simmer 15–20 minutes until sauce is glossy and chicken is cooked through.

Serve: Garnish with parsley or thyme and serve over rice or couscous.
