Oven-roasting bok choy brings out its natural sweetness and adds a delightful char, making a simple yet flavourful side dish.
Ingredients

4–6 baby bok choy heads, halved lengthwise

2 tbsp olive oil

2–3 garlic cloves, minced

Salt and black pepper, to taste

Optional: sesame seeds or lemon zest
Method

Preheat: Heat the oven to 200°C.

Prep bok choy: Place halved bok choy on a baking sheet, cut side up.

Season: Drizzle with olive oil, sprinkle with minced garlic, salt and pepper.

Roast: Bake 15–20 minutes until the stems are tender and edges slightly charred.

Finish & serve: Sprinkle with sesame seeds or lemon zest if you like, and serve warm.
