Ingredients

  • 500–600 g coloured carrots, scrubbed and trimmed

  • 2–3 tbsp olive oil

  • 1–2 tsp honey or maple syrup (optional)

  • Salt and black pepper, to taste

Method

  1. Preheat: Heat oven to 200°C and line a baking sheet with parchment paper.

  2. Toss carrots: Place carrots in a bowl and toss with olive oil, honey or maple syrup (if using), salt and pepper.

  3. Roast: Spread carrots in a single layer and roast 20–25 minutes, turning halfway, until tender and lightly caramelised.
