These roasted rainbow carrots are sweet, lightly caramelised and beautifully colourful — a simple yet elegant side dish that pairs with everything from grilled proteins to grain bowls.
Ingredients

500–600 g coloured carrots, scrubbed and trimmed

2–3 tbsp olive oil

1–2 tsp honey or maple syrup (optional)

Salt and black pepper, to taste

Optional: fresh thyme or parsley

Method

Preheat: Heat oven to 200°C and line a baking sheet with parchment paper.

Toss carrots: Place carrots in a bowl and toss with olive oil, honey or maple syrup (if using), salt and pepper.

Roast: Spread carrots in a single layer and roast 20–25 minutes, turning halfway, until tender and lightly caramelised.

Finish: Sprinkle with fresh thyme or parsley and lemon zest if you like.
