This sweet-tangy cranberry chicken brings juicy chicken breasts together with a glossy cranberry sauce — perfect with rice or mashed potatoes.
Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tbsp olive oil

1 small onion, finely chopped
-
2 garlic cloves, minced
-
1 cup cranberries (fresh or frozen)

½ cup chicken broth
-
¼ cup orange juice
-
2–3 tbsp brown sugar or honey

1 tbsp balsamic vinegar

Optional: fresh herbs (parsley or thyme)
Method

Season chicken: Pat chicken dry, then season with salt and pepper.

Sear chicken: Heat olive oil in a skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until golden. Remove from pan and set aside.

Cook aromatics: Add onion and garlic to the pan and sauté 2–3 minutes until softened.

Make sauce: Stir in cranberries, chicken broth, orange juice, brown sugar and balsamic vinegar. Bring to a simmer.

Combine & finish: Return chicken to the pan, reduce heat, and simmer 10–12 minutes until sauce thickens and chicken is cooked through.

Serve: Spoon sauce over chicken and garnish with fresh herbs.
