This sweet-tangy cranberry chicken brings juicy chicken breasts together with a glossy cranberry sauce — perfect with rice or mashed potatoes.

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 cup cranberries (fresh or frozen)

  • ½ cup chicken broth

  • ¼ cup orange juice

  • 2–3 tbsp brown sugar or honey

  • 1 tbsp balsamic vinegar

  • Optional: fresh herbs (parsley or thyme)

Method

  1. Season chicken: Pat chicken dry, then season with salt and pepper.

  2. Sear chicken: Heat olive oil in a skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until golden. Remove from pan and set aside.

  3. Cook aromatics: Add onion and garlic to the pan and sauté 2–3 minutes until softened.

  4. Make sauce: Stir in cranberries, chicken broth, orange juice, brown sugar and balsamic vinegar. Bring to a simmer.

  5. Combine & finish: Return chicken to the pan, reduce heat, and simmer 10–12 minutes until sauce thickens and chicken is cooked through.

  6. Serve: Spoon sauce over chicken and garnish with fresh herbs.

Homemade cranberry sauce is bright, simple and full of flavour — excellent with poultry, pork or simply on toast.

Ingredients

  • 300 g fresh cranberries

  • 100 g sugar (adjust to taste)

  • 100 ml water

  • Optional: zest and juice of 1 orange

  • Optional spices: cinnamon stick or a pinch of ground ginger

Method

  1. Combine ingredients: In a saucepan, add cranberries, sugar and water (plus orange zest/juice and spices if using).

  2. Cook: Bring to a boil, then reduce heat and simmer 10–12 minutes until cranberries burst and sauce thickens.

  3. Cool: Remove from heat and let cool — sauce will continue to thicken as it cools.

  4. Serve: Serve warm or chilled alongside your favourite dishes.
