Stuffed Medjool Dates

These stuffed Medjool dates are simple, elegant and perfect for parties, snacks or a sweet bite after dinner. Soft dates meet crunchy nuts and creamy cheese or nut butter for irresistible contrast.

Ingredients

  • 12 Medjool dates, pitted

  • 60–80 g goat cheese or cream cheese (or almond/peanut butter)

  • 30–40 g chopped nuts (e.g., pistachios, almonds or walnuts)

  • Optional: drizzle of honey or maple syrup

  • Optional: sea salt or cinnamon

Method

  1. Prep dates: Slice each date lengthwise and gently open, removing the pit if needed.

  2. Stuff: Spoon about 1–2 tsp of cheese or nut butter into each date.

  3. Add nuts: Sprinkle chopped nuts over the stuffed dates.

  4. Finish: Drizzle with honey or maple syrup and add a tiny pinch of sea salt or cinnamon if you like.

  5. Serve: Arrange on a plate and serve immediately.

Rich, fudgy brownies naturally sweetened with dates — perfect if you want a chocolatey treat without refined sugars. These are deliciously dense, chewy and deeply chocolate flavoured.

Ingredients

  • 200 g pitted dates

  • 120 ml hot coffee or hot water

  • 100 g dark chocolate, chopped

  • 2 tbsp cocoa powder

  • 80 ml coconut oil, melted

  • 2 eggs

  • ½ tsp vanilla extract

  • 100 g almond flour

  • ½ tsp baking soda

  • Pinch of salt

  • Optional: chocolate chips or chopped nuts

Method

  1. Soak dates: Place dates in a bowl and cover with hot coffee or hot water. Let sit 10 minutes to soften.

  2. Blend base: In a blender or food processor, pulse soaked dates into a paste. Add melted chocolate, cocoa powder and coconut oil — blend until smooth.

  3. Mix wet ingredients: In a large bowl, whisk together eggs and vanilla. Stir in the date-chocolate mixture.

  4. Add dry ingredients: Fold in almond flour, baking soda and salt until just combined. Add chocolate chips or nuts if using.

  5. Bake: Preheat oven to 175°C. Pour batter into a lined baking tin and bake 25–30 minutes, until set around the edges but still slightly soft in the centre.

  6. Cool & serve: Let cool completely before cutting into squares.
