Oysters with Finger Limes

Serves: 4 (as a starter)

Ingredients

  • 12 fresh oysters, shucked (keep as much oyster liquor as possible)

  • 2–3 finger limes (any colour), halved lengthways

  • ¼ tsp crushed native pepper (or freshly ground black pepper)

  • Optional: crushed ice, lemon or lime wedges for serving

Method

  1. Prepare oysters: Place oysters (in their shells) on a platter over crushed ice to keep them chilled.

  2. Extract pearls: Cut the finger limes in half lengthways. Gently squeeze or scrape out the citrus pearls (vesicles).

  3. Top oysters: Spoon about ¼ teaspoon of finger lime pearls onto each oyster. Sprinkle a pinch of crushed native pepper (or black pepper).

  4. Serve: Serve immediately so the citrus pearls bring a fresh, poppable bite with the natural oyster liquor.

Saltbush Salmon with Finger Lime Salad

Ingredients

  • 4 salmon fillets (about 150 g each)

  • 1 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1–2 tbsp saltbush (or a salty herb/leaf, optional)

For the salad

  • 1 cucumber, thinly sliced

  • 1 avocado, sliced

  • 2 finger limes, pearls removed

  • 1 tbsp lemon or lime juice

  • 2 tbsp olive oil

  • Optional: fresh herbs (coriander), chili, microgreens

Method

  1. Make the salad: Combine cucumber and avocado in a bowl. Add finger lime pearls.

  2. Dress: Mix lemon/lime juice with olive oil, then season with salt and pepper. Toss gently.

  3. Cook the salmon: Season salmon and cook in a hot pan with olive oil for 3–4 min per side until just cooked.

  4. Serve: Plate the salmon and spoon the finger lime salad over or alongside. Finish with extra finger lime pearls if you like.
