Ingredients
For the crust

170 g unsalted butter, melted

50 g sugar

220 g all-purpose flour

¼ tsp salt
For the filling

200 ml fresh pink grapefruit juice

1 tbsp grapefruit zest

3 large eggs

250 g sugar
-
30 g all-purpose flour

Optional: powdered sugar, for dusting
Method

Preheat oven to 175°C. Line a 20x20 cm baking tin with baking paper.

Mix melted butter, sugar, flour and salt. Press into the tin and bake 18–20 min until lightly golden.

Whisk eggs and sugar until smooth. Add grapefruit juice and zest, then whisk in flour.

Pour over the warm crust and bake 15–18 min until just set.

Cool completely, chill for cleaner slices, dust with powdered sugar and cut into bars.
