Pink Grapefruit Bars

Total time: 50 min (+ cooling)
Makes: 12–16 bars

Ingredients

For the crust

  • 170 g unsalted butter, melted

  • 50 g sugar

  • 220 g all-purpose flour

  • ¼ tsp salt

For the filling

  • 200 ml fresh pink grapefruit juice

  • 1 tbsp grapefruit zest

  • 3 large eggs

  • 250 g sugar

  • 30 g all-purpose flour

  • Optional: powdered sugar, for dusting

Method

  1. Preheat oven to 175°C. Line a 20x20 cm baking tin with baking paper.

  2. Mix melted butter, sugar, flour and salt. Press into the tin and bake 18–20 min until lightly golden.

  3. Whisk eggs and sugar until smooth. Add grapefruit juice and zest, then whisk in flour.

  4. Pour over the warm crust and bake 15–18 min until just set.

  5. Cool completely, chill for cleaner slices, dust with powdered sugar and cut into bars.

Salmon, Green Bean & Pink Grapefruit Salad

Prep time: 15 min
Cook time: 10 min
Total time: 25 min
Serves: 2–3

Ingredients

  • 2 salmon fillets (125–150 g each)

  • 200 g green beans, trimmed

  • 1 pink grapefruit

  • 60 g salad leaves (optional)

  • 1 tbsp olive oil (for cooking)

For the dressing

  • 2 tbsp olive oil

  • 1 tbsp grapefruit juice (from the fruit)

  • 1 tbsp lemon juice (optional)

  • 1 tsp Dijon mustard (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

Optional: fresh herbs (dill/parsley), toasted seeds for crunch

Method

  1. Cook the salmon: Season with salt and pepper. Pan-fry in 1 tbsp olive oil for 3–4 min per side until cooked through. Let cool slightly, then flake.

  2. Blanch the beans: Boil green beans for 3–4 min until tender-crisp. Drain and rinse under cold water.

  3. Prep the grapefruit: Peel and segment the grapefruit, removing as much white pith as possible. Save a little juice for the dressing.

  4. Make the dressing: Whisk olive oil with grapefruit juice (and lemon juice if using). Add mustard if desired. Season with salt and pepper.

  5. Assemble: Toss green beans (and salad leaves) with dressing. Top with grapefruit segments and salmon. Finish with herbs or seeds.
