Creamy Grape Salad with Brown Sugar & Pecans

Ingredients

  • 900 g seedless grapes (mix of red + green), washed and dried

  • 225 g cream cheese, softened

  • 240 ml sour cream (or Greek yoghurt)

  • 50 g granulated sugar

  • 1 tsp vanilla extract

  • 50 g brown sugar (for topping)

  • 60 g pecans, chopped (toasted if you like)

Method

  1. Make the creamy base: In a large bowl, mix the cream cheese until smooth. Add sour cream, sugar and vanilla, and whisk until creamy.

  2. Add the grapes: Gently fold in the grapes until evenly coated.

  3. Chill (optional): Refrigerate for 30 minutes for the best texture.

  4. Finish & serve: Just before serving, sprinkle with brown sugar and chopped pecans for a sweet crunch.

Thyme-Roasted Grapes with Ricotta & Grilled Bread

Serves: 4 (as a snack or starter)

Ingredients

  • 450 g seedless grapes (red or mixed)

  • 1 tbsp olive oil

  • 1 tsp fresh thyme leaves (plus extra to finish)

  • ¼ tsp salt

  • 4 slices rustic bread (sourdough works great)

  • 200 g fresh ricotta

  • Optional: honey or black pepper to finish

Method

  1. Roast the grapes: Preheat the oven to 200°C. Place grapes on a baking tray, drizzle with olive oil, add thyme and salt, and toss gently. Roast for 15–20 minutes until the grapes soften and start to burst.

  2. Toast the bread: While the grapes roast, toast or grill the bread until golden and crisp.

  3. Assemble: Spread ricotta onto the warm toast. Spoon over the roasted grapes and any tray juices.

  4. Serve: Finish with a little extra thyme (and a drizzle of honey if you like).
