Easy Lemon Chicken

Ingredients

  • 600 g chicken breast (or thighs)

  • 2 tbsp all-purpose flour

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 250 ml chicken broth

  • 80 ml fresh lemon juice (about 2 lemons)

  • 1 tbsp lemon zest

  • 1 tsp Dijon mustard (optional)

  • Optional: fresh parsley, chopped

Method

  1. Prep the chicken: Slice chicken into cutlets (or use smaller pieces). Mix flour with salt and pepper, then coat the chicken lightly.

  2. Brown: Heat olive oil and butter in a large pan. Cook chicken for 4–5 min per side until golden and cooked through. Remove and set aside.

  3. Make the sauce: Add garlic to the pan and cook 30 seconds. Pour in broth and lemon juice, scraping up any browned bits. Add lemon zest (and mustard if using). Simmer 3–5 min.

  4. Combine: Return chicken to the pan and spoon sauce over. Simmer 2 min to coat.

  5. Serve: Top with parsley and serve with rice, potatoes or vegetables.

Classic Lemon Bars

Total time: 50 min (+ cooling)
Makes: 12–16 bars

Ingredients

For the base

  • 180 g all-purpose flour

  • 50 g powdered sugar

  • ¼ tsp salt

  • 170 g unsalted butter, cold and cubed

For the lemon filling

  • 4 eggs

  • 250 g sugar

  • 120 ml fresh lemon juice (about 2–3 lemons)

  • 1 tbsp lemon zest

  • 30 g all-purpose flour

  • Optional: powdered sugar, for dusting

Method

  1. Preheat oven to 175°C. Line a 20x20 cm baking tin with baking paper.

  2. Mix flour, powdered sugar and salt. Rub in the butter until crumbly, then press into the tin.

  3. Bake the base for 18–20 min until lightly golden.

  4. Whisk eggs and sugar until smooth. Add lemon juice and zest, then whisk in flour.

  5. Pour filling over the warm base and bake 15–18 min until just set.

  6. Cool completely, dust with powdered sugar and cut into bars.
