Ingredients

600 g chicken breast (or thighs)

2 tbsp all-purpose flour

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

250 ml chicken broth
-
80 ml fresh lemon juice (about 2 lemons)

1 tbsp lemon zest
-
1 tsp Dijon mustard (optional)

Optional: fresh parsley, chopped
Method

Prep the chicken: Slice chicken into cutlets (or use smaller pieces). Mix flour with salt and pepper, then coat the chicken lightly.

Brown: Heat olive oil and butter in a large pan. Cook chicken for 4–5 min per side until golden and cooked through. Remove and set aside.

Make the sauce: Add garlic to the pan and cook 30 seconds. Pour in broth and lemon juice, scraping up any browned bits. Add lemon zest (and mustard if using). Simmer 3–5 min.

Combine: Return chicken to the pan and spoon sauce over. Simmer 2 min to coat.

Serve: Top with parsley and serve with rice, potatoes or vegetables.
