Creamy Mandarin Popsicles

Freeze time: 6 hours (or overnight)

Makes: 6 popsicles

Ingredients

  • 200 ml mandarin juice (freshly squeezed)

  • 200 g Greek yoghurt (or plant-based yoghurt)

  • 2 tbsp honey or maple syrup (adjust to taste)

  • 1 tsp vanilla extract (optional)

  • 1–2 mandarins, segmented (optional, for texture)

Method

  1. Whisk mandarin juice with yoghurt, honey/maple syrup and vanilla until smooth.

  2. Add a few mandarin segments to each mould (optional), then pour in the mixture.

  3. Insert sticks and freeze for at least 6 hours (best overnight).

  4. Run the mould briefly under warm water to release and serve immediately.

Fresh Satsuma Salad with Greens & Citrus Dressing

Ingredients

  • 4 satsumas or mandarins, peeled and segmented

  • 120 g mixed salad greens

  • 1 small cucumber, sliced

  • 1 avocado, sliced (optional)

  • ½ small red onion, thinly sliced (optional)

  • Optional: 30 g toasted nuts or seeds (for crunch)

For the dressing

  • 2 tbsp olive oil

  • 2 tbsp fresh lemon juice (or mandarin juice)

  • 1 tsp honey or maple syrup (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

Method

  1. Prep the fruit: Peel the satsumas/mandarins and separate into segments.

  2. Build the salad: Add greens, cucumber (and avocado/onion if using) to a bowl or platter.

  3. Add satsumas: Scatter the citrus segments over the salad.

  4. Make the dressing: Whisk olive oil with lemon juice, salt and pepper (add honey/maple syrup if desired).

  5. Finish & serve: Drizzle over the salad, toss gently and top with toasted nuts/seeds.
