Ingredients

200 ml mandarin juice (freshly squeezed)

200 g Greek yoghurt (or plant-based yoghurt)

2 tbsp honey or maple syrup (adjust to taste)

1 tsp vanilla extract (optional)

1–2 mandarins, segmented (optional, for texture)
Method

Whisk mandarin juice with yoghurt, honey/maple syrup and vanilla until smooth.

Add a few mandarin segments to each mould (optional), then pour in the mixture.

Insert sticks and freeze for at least 6 hours (best overnight).

Run the mould briefly under warm water to release and serve immediately.
