Mangosteen-Ginger Bread “Cakey” Cookies

Prep time: 15 min
Bake time: 10–12 min
Total time: 25 min
Makes: ~20 cookies

Ingredients

  • 190 g flour

  • ½ tsp baking powder

  • 1 tsp baking soda

  • ½ tsp cinnamon

  • Pinch salt

  • 120 ml agave syrup

  • 120 ml canola oil

  • 2 eggs

  • 1 tsp vanilla extract

  • 5 mangosteens, pulp only, chopped

  • ½ cup dried blueberries

  • ½ cup dried cranberries

  • 1 tbsp fresh ginger, minced

  • Powdered sugar (to finish)

Method

  1. Preheat oven to 175°C and line a tray.

  2. Mix dry ingredients in a bowl. Mix wet ingredients in another bowl.

  3. Stir in mangosteen, dried fruit and ginger, then combine with dry mix.

  4. Scoop onto tray and bake 10–12 min. Cool and dust with powdered sugar.

Mangosteen Salad with Steamed Prawns & Snow Peas

Prep time: 20 min
Cook time: 10 min
Total time: 30 min
Serves: 4

Ingredients

  • 150 g rice vermicelli

  • 250 g prawns

  • 120 g snow peas, sliced

  • 6 mangosteens, peeled

  • 2 spring onions, sliced

Dressing

  • 2 tbsp lime juice

  • 1 tbsp fish sauce

  • 1 tbsp soy sauce

  • 1 tbsp honey or sugar

  • 1 garlic clove, grated

Method

  1. Cook vermicelli, drain and rinse cold.

  2. Steam prawns 3–4 min until pink.

  3. Toss noodles with snow peas, spring onion and mangosteen.

  4. Mix dressing, pour over salad and serve.
