Bright, fresh and lightly tangy, this papaya salsa makes an excellent topping for grilled fish, chicken or tacos — or simply serve with tortilla chips.
Ingredients

1 small ripe papaya, peeled, seeded and diced (about 350–400 g)

1 small red onion, finely chopped

1 red chilli, deseeded and finely chopped

1 lime, juice and zest

Small handful fresh coriander, roughly chopped

Salt and black pepper, to taste
Method

Prep the fruit & veg: Place the diced papaya, onion and chilli in a bowl.

Add lime: Zest the lime over the bowl, then squeeze in the juice.

Season: Add coriander, salt and pepper.

Combine: Gently toss all ingredients until evenly mixed.

Serve: Best served fresh — pair with grilled proteins or chips.
