Papaya Salsa

Bright, fresh and lightly tangy, this papaya salsa makes an excellent topping for grilled fish, chicken or tacos — or simply serve with tortilla chips.

Ingredients

  • 1 small ripe papaya, peeled, seeded and diced (about 350–400 g)

  • 1 small red onion, finely chopped

  • 1 red chilli, deseeded and finely chopped

  • 1 lime, juice and zest

  • Small handful fresh coriander, roughly chopped

  • Salt and black pepper, to taste

Method

  1. Prep the fruit & veg: Place the diced papaya, onion and chilli in a bowl.

  2. Add lime: Zest the lime over the bowl, then squeeze in the juice.

  3. Season: Add coriander, salt and pepper.

  4. Combine: Gently toss all ingredients until evenly mixed.

  5. Serve: Best served fresh — pair with grilled proteins or chips.

Papaya Jam (No Pectin, Sugar-Free)

A naturally sweet and luscious jam made from papaya alone — no added sugar or pectin needed. Perfect on toast, yoghurt or swirled into desserts.

Ingredients

  • 1 kg ripe papaya, peeled, seeded and roughly chopped

  • Juice of 1 lemon

  • Optional: a little honey or maple syrup (to taste)

Method

  1. Prepare papaya: Place the chopped papaya in a large, heavy-bottomed pot.

  2. Add lemon: Squeeze in the lemon juice and stir to combine.

  3. Cook down: Bring to a gentle boil over medium heat, then reduce heat to low and simmer 30–35 minutes, stirring occasionally, until the fruit breaks down and thickens.

  4. Adjust sweetness: Taste and add honey/maple syrup if needed, then simmer a few more minutes.

  5. Finish: Remove from heat, let cool slightly, then spoon into clean jars. Store in the fridge and enjoy within a couple of weeks.
