Passionfruit & Coconut Slice

A tropical twist on a classic slice, this version uses passionfruit and coconut for a sweet, tangy and summery treat.

Ingredients

Base

  • 200 g plain flour

  • 125 g unsalted butter, softened

  • 50 g sugar

  • Pinch of salt

Filling

  • 3 eggs

  • 200 g sweetened condensed milk

  • 100 g desiccated coconut

  • 80–100 ml passionfruit pulp (about 4–6 passionfruits)

  • Zest of 1 lime (optional)

Method

Preheat: Heat the oven to 180°C. Line a square baking tin (about 20x20 cm) with baking paper.
Make the base: In a bowl, rub flour, butter, sugar and salt together until mixture resembles fine crumbs. Press firmly into the base of the prepared tin.
Bake base: Bake for 10–12 minutes until just set and lightly golden. Remove from oven.
Mix filling: Whisk eggs and condensed milk together. Stir in coconut, passionfruit pulp and lime zest.
Bake slice: Pour the filling over the warm base and bake 15–18 minutes until the centre is just set.
Cool & cut: Let cool completely, then cut into squares.

This passionfruit lemon slice pairs tangy citrus with a buttery base and sweet topping — bright, zesty and deeply satisfying.

Base

  • 250 g plain flour

  • 125 g unsalted butter, softened

  • 50 g caster sugar

Topping

  • 3–4 passionfruits, pulp only

  • 2 lemons, juice and zest

  • 3 eggs

  • 200 g sugar

  • 60 g plain flour

Method

Preheat: Heat oven to 180°C. Line a baking tin (about 20x30 cm) with baking paper.
Make the base: Beat butter and caster sugar together until light. Add flour and mix to a soft dough. Press into the base of the tin.
Bake base: Bake 10–12 minutes until just firm.
Mix topping: In a bowl, whisk eggs, sugar, lemon zest, lemon juice and passionfruit pulp. Stir in flour until smooth.
Bake slice: Pour the topping over the hot base and bake 20–25 minutes until just set.
Cool & serve: Allow to cool fully before slicing.
