Grilled Peaches

Grilling brings out the natural sugars in peaches and adds a subtle smoky char — delicious on its own or alongside ice cream, yoghurt or savoury mains.

Ingredients

  • 4 ripe peaches, halved and pitted

  • 2–3 tbsp olive oil or melted butter

  • 2–3 tsp honey or maple syrup

  • Optional: pinch of cinnamon or sea salt

  • Optional garnishes: fresh mint, Greek yoghurt, vanilla ice cream

Method

  1. Heat grill: Preheat a grill or grill pan over medium-high heat.

  2. Prep peaches: Brush cut-side of peach halves with olive oil or melted butter.

  3. Grill: Place peaches cut-side down and cook 3–4 minutes until grill marks form. Flip and grill another 3–4 minutes until tender.

  4. Sweeten: Drizzle with honey or maple syrup and sprinkle with cinnamon or salt if you like.

  5. Serve: Serve warm with mint, yoghurt or ice cream.

This elegant French-style tart combines a buttery pastry with juicy peaches and a glossy sweet glaze — perfect for dessert or a special occasion treat.

Ingredients

For the pastry

  • 250 g plain flour

  • 125 g cold unsalted butter, cubed

  • 70 g sugar

  • 1 egg yolk

  • 2–3 tbsp cold water

  • Pinch of salt

For the filling

  • 6–8 ripe peaches, peeled, halved and sliced

  • 50 g sugar

  • 1–2 tbsp apricot jam or peach preserves (for glaze)

  • Optional: 1 tbsp lemon juice or zest

Method

Make the pastry: Mix flour, sugar and salt in a bowl. Rub in cold butter until mixture resembles breadcrumbs. Add egg yolk and cold water a little at a time until dough comes together. Wrap and chill 30 minutes.
Preheat: Heat oven to 180°C.
Assemble tart: Roll pastry out to fit a tart tin (about 23 cm). Press into the tin and trim edges. Arrange peach slices over the base in overlapping rows.
Bake: Bake for 40–45 minutes until the pastry is golden and the peaches are tender.
Glaze: Warm apricot jam with a little water or lemon juice and brush over the peaches to give a shine.
Serve: Cool slightly, then slice and serve.
