These light pea fritters are crispy on the outside and tender inside — packed with fresh peas and herbs, making a vibrant starter, snack or side.

Ingredients

  • 300 g peas (fresh or frozen, thawed)

  • 1 small potato, boiled and mashed

  • 1 egg

  • 40 g plain flour (plus extra for dusting)

  • 2 tbsp fresh herbs (mint, parsley or dill), finely chopped

  • Zest of 1 lemon

  • Salt and black pepper, to taste

  • 2–3 tbsp olive oil (for frying)

  • Optional: a pinch of chilli flakes

Method

  1. Mix batter: In a bowl combine peas, mashed potato, egg, flour, herbs and lemon zest. Season with salt, pepper and chilli if using. Stir until evenly mixed.

  2. Heat oil: Warm olive oil in a large skillet over medium heat.

  3. Form fritters: Dust your hands with a little flour, then shape spoonfuls of the mixture into small patties.

  4. Cook: Place fritters in the skillet and fry 3–4 minutes per side until golden and crisp.

  5. Drain: Transfer to a plate lined with paper towel to drain excess oil.

  6. Serve: Serve warm with yoghurt, tzatziki or your favourite dip.

Pasta Carbonara with English Peas

A fresh twist on classic carbonara — sweet English peas are added to the creamy, egg-enriched sauce for extra texture and flavour.

Ingredients

  • 350–400 g pasta (spaghetti, bucatini or linguine)

  • 150 g pancetta or guanciale (optional but traditional)

  • 1–2 garlic cloves, peeled and lightly crushed

  • 3 large eggs

  • 60 g grated Parmesan or Pecorino

  • 150 g English peas (fresh or frozen)

  • Salt and black pepper, to taste

  • Optional: extra cheese and lemon zest to finish

Method

  1. Cook pasta: Bring salted water to a boil and cook pasta to al dente according to package instructions. Reserve some pasta water.

  2. Cook pancetta: Meanwhile, heat a skillet over medium heat. Add pancetta and garlic and cook 4–5 minutes until crisp. Remove garlic and discard.

  3. Beat eggs & cheese: In a bowl whisk eggs with grated cheese and plenty of black pepper.

  4. Add peas: Add peas to the pancetta pan and cook 2–3 minutes until warmed through.

  5. Combine: Drain pasta and add to the pan off the heat. Quickly pour in the egg and cheese mixture, tossing rapidly so the eggs form a creamy sauce (add pasta water a splash at a time if needed).

  6. Serve: Serve immediately with extra cheese and lemon zest if you like.
