These light pea fritters are crispy on the outside and tender inside — packed with fresh peas and herbs, making a vibrant starter, snack or side.
Ingredients

300 g peas (fresh or frozen, thawed)

1 small potato, boiled and mashed

1 egg

40 g plain flour (plus extra for dusting)

2 tbsp fresh herbs (mint, parsley or dill), finely chopped

Zest of 1 lemon

Salt and black pepper, to taste

2–3 tbsp olive oil (for frying)

Optional: a pinch of chilli flakes
Method

Mix batter: In a bowl combine peas, mashed potato, egg, flour, herbs and lemon zest. Season with salt, pepper and chilli if using. Stir until evenly mixed.

Heat oil: Warm olive oil in a large skillet over medium heat.

Form fritters: Dust your hands with a little flour, then shape spoonfuls of the mixture into small patties.

Cook: Place fritters in the skillet and fry 3–4 minutes per side until golden and crisp.

Drain: Transfer to a plate lined with paper towel to drain excess oil.

Serve: Serve warm with yoghurt, tzatziki or your favourite dip.
