Sunken Plum Cake

A moist, tender cake studded with fresh plums that gently sink into the batter while baking, creating a rich layer of fruit and cake together.

Ingredients

For the cake batter

  • 200 g plain flour

  • 150 g caster sugar

  • 2 tsp baking powder

  • Pinch of salt

  • 2 large eggs

  • 100 ml vegetable oil

  • 100 ml milk

  • 1 tsp vanilla extract

For the topping

  • 6–8 ripe plums, halved and pitted

  • 2–3 tbsp sugar (for sprinkling)

  • Optional: ground cinnamon or cardamom

Method

Preheat: Heat oven to 180°C. Grease a cake tin (about 23 cm) and line the base with baking paper.
Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder and salt.
Make the batter: In a separate bowl, beat eggs with oil, milk and vanilla. Pour the wet mix into the dry ingredients and stir until just combined.
Add plums: Arrange the plum halves cut-side up on top of the batter, pressing them in slightly. Sprinkle with a little sugar (and spice if using).
Bake: Bake for 40–45 minutes, until a skewer inserted into the centre comes out clean and the cake is golden.
Cool & serve: Let cool slightly before slicing. Serve warm or at room temperature.

Stewed plums are a comforting, fragrant dessert or topping. Warm, lightly sweet and gently spiced, they pair beautifully with yoghurt, ice cream, pancakes or porridge.

Ingredients

  • 500 g ripe plums, pitted and sliced

  • 2–3 tbsp honey or sugar (to taste)

  • 1 tsp lemon juice

  • ½ tsp ground cinnamon (optional)

  • 60 ml water

  • Optional: splash of vanilla extract or pinch of cardamom

Method

Prep fruit: Pit and slice the plums.
Combine ingredients: In a medium saucepan, add plums, honey/sugar, lemon juice, cinnamon (if using) and water.
Cook down: Bring to a gentle simmer over medium heat. Cook 15–20 minutes, stirring occasionally, until the fruit has softened and released its juices.
Adjust: Taste and add more sweetener or lemon if needed. Add vanilla or cardamom if you like.
Serve: Spoon warm over yoghurt, ice cream, porridge or pancakes, or enjoy on its own.
