Sweet Corn with Black Pepper Sauce

This sweet corn dish brings sweet, crisp kernels together with a bold black pepper sauce — quick, vibrant and full of flavour.

Ingredients

  • 4 ears sweet corn, kernels cut off (about 4 cups)

  • 1 tbsp olive oil or butter

  • 2 garlic cloves, minced

  • 1–2 tbsp soy sauce

  • 1–2 tsp freshly ground black pepper

  • 1 tbsp water

  • Optional: pinch of chilli flakes

  • Optional garnish: chopped parsley or spring onions

Method

  1. Prep kernels: Cut sweet corn kernels off the cob and set aside.

  2. Heat pan: Warm olive oil or butter in a large skillet over medium heat.

  3. Cook garlic & corn: Add minced garlic and corn kernels and cook 3–4 minutes, stirring occasionally.

  4. Add sauce: Stir in soy sauce, water and plenty of black pepper (plus chilli flakes if using).

  5. Finish: Cook 3–5 minutes more until the sauce coats the corn and flavours are well absorbed.

  6. Serve: Transfer to a bowl, garnish with parsley or spring onions, and serve warm.

Ingredients

  • 1 cup sweet corn kernels (fresh, canned or frozen)

  • 1 large egg

  • ¼ cup milk

  • ¼ tsp salt

  • ¼ tsp black pepper

  • ½ cup all-purpose flour

  • ½ tsp baking powder

  • 2–3 tbsp oil (for frying)

  • Optional: chopped chives or parsley

Method

  1. Mix batter: In a bowl whisk egg with milk, salt and pepper. Stir in flour and baking powder until smooth.

  2. Add corn: Fold in sweet corn kernels (and herbs if using).

  3. Heat oil: Warm oil in a large skillet over medium heat.

  4. Fry fritters: Spoon batter into the hot pan to form fritters. Cook 2–3 minutes per side until golden and crispy.

  5. Drain: Transfer to a plate lined with paper towels to drain excess oil.

  6. Serve: Serve warm with your favourite dip or sauce.
