Delicious, Colourful, Organic, “Wild” Potatoes

This is a great side dish which you can enjoy for example with fried salmon and a fresh organic salad.

Wash the potatoes, cut them into equal parts and boil them (unpeeled) together with a slice of lemon. Boil the carrots until they are “al dente”.  Cut the herbs and mix them in a bowl together with the olive oil, some lemon juice, salt and pepper.  Peel the potatoes and add them to carrots. Add the oil, herb and lemon juice dressing.

a fewcarrots
halfa lemon
some freshherbs like thyme, basil and parsley
 olive oil
 Butter
 salt and pepper
