Curry paste with fresh curcuma

Home made curry paste is very easy to make. It’s a basic that allows you to create any 100% home made curry.  Ready in a minute and very tasty!

Preparation:

Cut the chili pepper in half and remove the seeds. Cut the spring onions, grate the ginger and curcuma. Finely chop the garlic. Mix all ingredients using a blender. Add the sugar, soy sauce, sesame oil, tomato paste and basil. Finely mix everything and your curry paste is ready!  

Making a curry is a simple process: heat a bit of oil in a big pan. Add the curry paste and leave to simmer for about 30 seconds. Add the vegetables, mix well and cook until the vegetables are done. Add some coconut, a bit of water, salt and lemon juice. Cook some rice and your delicious meal is ready!

Ingredients

  • 1 chili pepper
  • 1 clove of garlic
  • 2 spring onions
  • 2 cm ginger
  • 2 cm fresh curcuma
  • 1 table spoon tomato paste
  • 1 tea spoon brown sugar
  • 2 table spoon soy sauce or tamari (gluten free)
  • 1 table spoon sesame oil
  • 10 leaves basil
