INSTRUCTIONS
- Saute chopped onions, carrots, and leak (~2 minutes). Add garlic + 30 seconds.
 - Add in Zucchini, Sweet potatoes, and 2-3 cups broth (Optional herbs: parsley, thyme..).
 - Season with salt & pepper to taste.
 - Bring to a boil then reduce heat to medium-low, cover and simmer until sweet potatoes are almost fully tender about 20 minutes.
