Organic zucchini rolls

A delicious and healthy starter!

Cut the zucchini lengthways in long thin strips (as thin as possible), brush both sides with olive oil and grill gently.
In a bowl mix the goat cheese with the parsley, lemon juice , lemon zest, salt and pepper. 
Put a dollop of the mix at the end of the strip and add a leaf of spinach and a leaf of basil.
Roll up and serve.
